Stifado without meat or poultry. Blend of onions and mushrooms.

Recipe Ingredients for Stifado

14 oz Boiler Onions
4 oz Gourmet Mushroom Blend Packaged
30 oz Cipolline Onions
0.5 tsp Pepper, Black
1 tsp Allspice, Ground
0.5 tsp, crumbled Bay Leaf
1.5 tbsp Olive Oil
3 fl oz White Vinegar, Distilled, Organic
1 cup (8 fl oz) Water
16 fl oz Organic Free Range Chicken Low Sodium Broth
1 large whole (3" dia) Tomatoes, Red, Ripe
2 leaves Basil, Fresh
0.5 tsp Garlic

Recipe Directions for Stifado

Clean onions and mushrooms well. Put in large pot. Add water, broth, crushed tomato, basil, bay leaf, allspice and garlic. Cook on high heat for 10 minutes. Add olive oil, vinegar and pepper. Reduce heat and cover. Simmer for 1 hour. Stir occasionally.
