Recipe Ingredients for Sticky Toffee Pudding

3 c all-purpose flour
1 t baking powder
1/4 t baking soda
8 oz dates, chopped
1/2 c unsalted butter, softened
1 T unsalted butter
2 c dark brown sugar, packed
3 large eggs, lightly beaten
1 t vanilla
1/2 c unsalted butter
1/2 c heavy cream
1 c light brown sugar
1 c heavy cream, whipped

Recipe Directions for Sticky Toffee Pudding

  1. Preheat oven to 350 degrees. Assemble your muffin tins with muffin cups/liners.

  2. In a medium bowl, whisk together flour, baking powder and baking soda; set aside.

  3. In a small saucepan, combine dates, 1 c warm water. Simmer until most of the water is evaporated, about 5 minutes. Process in a food processor until smooth, or mash them with the back of a spoon until they are the consistency of applesauce.

  4. Using a mixer, beat the butter and sugar on a medium speed until light and fluffy. Slowly add the eggs and beat to combine. Add the flour mixture, and beat until fully combined.

  5. Add the date purée, a little at a time, beating to combine after each addition.

  6. Fill muffin cups about half-full, and bake for 20-30 minutes until the tops are firm to the touch, or a toothpick inserted into them comes out clean.

  7. Make toffee sauce: Combine butter, heavy cream, and brown sugar in a small, heavy saucepan; heat to boiling, stirring constantly. Boil gently over medium-low heat until thick, about 8 minutes.

  8. Preheat broiler. Spoon 1/2 c of sauce over pudding. Place pudding under broiler, 1 minute.

  9. To serve, drizzle more toffee sauce over pudding, and dollop with whipped cream
