Recipe Ingredients for Sticky Peanut Butter and Molasses Granola Bars

4 cups quick oats
1/4 cup wheat germ, toasted
1/4 cup sunflower seeds, raw
1/4 cup pumpkin seeds, raw
1 cup almonds, raw, chopped
3 tablespoons sesame seeds
3 tablespoons flax seeds
1/2 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1/2 cup peanut butter, organic, (no sugar added) creamy
1/2 cup molasses, black strap
1/4 cup honey
1 cup raisins, regular or golden
3/4 cup peanut butter, organic, (no sugar added) creamy
1/2 cup molasses, black strap
1/3 cup honey

Recipe Directions for Sticky Peanut Butter and Molasses Granola Bars

  1. Preheat the oven to 400.

  2. In a large bowl, mix all the dry ingredients together.

  3. In a microwave safe bowl, combine the 1/2C peanut butter, 1/4C molasses, and 1/4C honey, and microwave on high for 30 seconds. Maybe more, maybe less, just make it liquid.

  4. Pour the warm liquid over the dry ingredients and stir. Combine well.

  5. Place parchment paper on a baking sheet, and spread the granola mixture onto the sheet.

  6. Bake for 20-22 minutes, stirring half-way through.

  7. Cool on a wire rack. When completely cool, break up and add the raisins.

  8. Put the cool granola into a large bowl.

  9. In a microwave safe bowl, combine the remaining peanut butter, molasses and honey. Microwave on high for 30 seconds to a minute.

  10. Pour this mixture over the granola and combine thoroughly--it should be really sticky.

  11. Spread the entire mixture over a 1/2 sheet pan and back in a 400 degree preheated oven for 15-20 minutes.

  12. Let this cool on a wire rack completely before cutting into 16 bars.

  13. Store in an airtight container between layers of wax paper or parchment.
