Baked chicken thighs in a sticky sweet BBQ sauce

Recipe Ingredients for Sticky Chicken

3 lbs boneless, skinless chicken thighs
1/2 c barbecue sauce (hickory flavored)
1/4 c reduced-sodium soy sauce
1/4 c red wine vinegar
1/4 c maple syrup
1 tbsp chili powder
1 tbsp dijon mustard
1 tbsp gingerroot, grated
2 tsp garlic, minced
1 tsp ground cumin
1 tbsp cornstarch

Recipe Directions for Sticky Chicken

  1. Preheat oven to 400 degrees F. Spray 9 X 13 baking pan with cooking spray. Arrange chicken thighs in pan in a single layer.

  2. Whisk together all remaining ingredients except cornstarch. Pour evenly over chicken, turning pieces to coat both sides.

  3. Bake uncovered for about 40 minutes or until chicken is no longer pink in center.

  4. Remove chicken from pan and keep warm. Pour sauce in pan. Bring to boil over med-high heat.

  5. Combine cornstarch with equal amt of water and mix until smooth. Add to sauce. Cook until bubbly and thickened - about 1 min.

  6. Serve chicken with sauce on top.
