Salted cod in tomato sauce. Served with rice, potatoes, green bananas or dumplings!

Recipe Ingredients for Stewed Salted Cod (Bacalao)

3/4 lb cod, atlantic, dried and salted
1/2 large tomato
1 small onion
1/4 cup green bell pepper
1/4 cup red bell pepper
1 stalk celery
2 garlic cloves
1 scallion
1/4 cup ketchup
1 1/2 cup water
1 tbsp. olive oil
1/2 tsp. garlic powder
1/2 tsp. black pepper
1/2 tsp. red pepper flakes
1/2 tsp. sugar

Recipe Directions for Stewed Salted Cod (Bacalao)

  1. 1. Soak cod in water overnight to remove salt. Change water once.

  2. 2. Saute vegetables in olive oil.

  3. 3. Add salted cod in pieces.

  4. 4. Add tomato ketchup, water, seasonings and sugar.

  5. 5. Simmer for 15mins.
