Recipe Ingredients for Stewed eggplant with other vegetables

20 oz eggplant
2 oz onion
4 oz carrot
6 oz mushrooms
3 oz tomato
50 g low sodium vegetable juice
3/4 tsp sea salt
1 tsp garlic powder
1 tsp paprika
1 tsp sugar
1 tsp vinegar
0.12 tsp ground black pepper
0.66 tbsp olive oil

Recipe Directions for Stewed eggplant with other vegetables

  1. Wash and peel eggplant.

  2. Wash other vegetables.

  3. Cut all vegetables in small cubes.

  4. Put in a saucer.

  5. Add olive oil, salt, sugar, ground back pepper, and vinegar.

  6. Cover with lid.

  7. Simmer on low heat until tender.

  8. Enjoy.
