My own take on a Trinidad & Tobago classic, stewed chicken. Some cilantro and soy sauce makes this version just a little different. This is suitable for a low sodium diet. Depending on the soy sauce you use (I use Kikkoman) you may need to add or subtract up to 300mg sodium from the nutritional information.

Recipe Ingredients for Stewed Chicken Trinidad - Asian Style

800 g raw chicken
6 pimento peppers
1 medium tomatoes
1/4 cup cilantro
1 large onion
1 tsp thyme
1/4 cup chives
6 cloves garlic
1 tablespoon soy sauce
1 tbsp canola oil
1 tsp black pepper
2/5 tsp salt
1/4 cup brown sugar

Recipe Directions for Stewed Chicken Trinidad - Asian Style

  1. Take the skin off the chicken parts. Cut the legs and breast pieces into 3 equal sections and set aside in a large bowl.

  2. Dice the potatoes and set aside.

  3. Combine with the chicken the diced pimentos, habanero pepper, tomatoes, onion, garlic, thyme, cilantro, salt, papper, soy sauce and rum. Mix well and set aside for at least 1 hour. Marinade up to overnight for the best flavor.

  4. In a large saucepan, heat the canola oil under high heat. Add the brown sugar and stir constantly, until the sugar carmelizes. You will want to bubbling to subside and turn dark brown, but NOT black.

  5. When the sugar reaches dark brown, quickly add the chicken mixture, stirring quickly. A lot of steam will be released.

  6. Cook under high heat for 15 - 20 mins. After 10 minutes, add the diced potatoes. Add a little water if required if the stewing liquid gets very low.

  7. Serve with rice, couscous or macaroni pie.
