Healthy and tasty way to cook potatoes.

Recipe Ingredients for Stew / Potato and Mushrooms in Light Sour Cream

2 small potatoes
1/2 tsp canola oil
1/3 cup onion, sliced
5 oz mushrooms, sliced
1 tbsp soy sauce
1 medium tomato, chopped
1 tsp oregano
2 tbsp low fat sour cream
1 clove garlic
1 dash black pepper

Recipe Directions for Stew / Potato and Mushrooms in Light Sour Cream

  1. cut potatoes into large dices, rinse in a cold water and put into a saucepan with a boiling water.

  2. while your potatoes are boiling (for about 10 min), saute onions and mushrooms. Add soy sauce, tomatoes and oregano.

  3. in 10 min add precooked potatoes.

  4. add some broth from the saucepan if needed.

  5. cook till stew is almost ready (about 8 minutes)

  6. add sour cream and garlic. Cook for another 2 minutes.

  7. season with pepper, greens and serve
