Recipe Ingredients for Stew, Ellen's

2 tablespoons olive oil
1/2 cup scallions, chopped
5 cloves garlic, smashed
1/2 tablespoon ginger, chopped
1 pound mushrooms, sliced
1 eggplant, peeled and cubed
6 tablespoons soy sauce
1/2 teaspoon tabasco
3 tablespoons wine, red

Recipe Directions for Stew, Ellen's

  1. Saute the scallions, garlic and eggplant in the oil for about 30 seconds.

  2. Add remaining ingredients.

  3. Simmer covered for 1 hour.
