Hearty Low Cal stew just in time for the cold weather

Recipe Ingredients for Stew for a Crowd

16 oz Beans, Pinto, Mature Seeds
48 oz Beef Tongue
12 cloves Garlic
48 oz Tomatillos
2 cup, sliced Onions

Recipe Directions for Stew for a Crowd

  1. Boil Cows tongue for 4 hours. Set aside and let cool. Peel when tongue is very cool.

  2. In a crock pot, pour in 1 lb pinto beans which have been washed and picked clean. Cook beans on high until quite tender.

  3. Chop beef tongue into bite size pieces and add to crock pot.

  4. Cut Tomatillos into 8ths. Add to crock pot.

  5. Mince onions and garlic add to the crock pot. Cook until tomatillos are quite soft and falling apart. You will need to add salt to tast. Serve with Corn Tortillas or over brown rice.
