A wonderful blend of seafood in a light cream broth

Recipe Ingredients for Steve's Seafood Chowder

4 slices bacon, cooked
2 medium onions
900 ml low-sodium chicken broth
2 cups water
6 medium potatoes, cubed
320 g lobster meat
2 cups crab meat
6 ounces salmon
6 ounces sole
350 g bay scallops
1 1/2 cups clams with juice
6 ounces clam juice
2 tsp curry powder
1 pinch cayenne
1 pinch salt
1 pinch pepper
1000 ml Half and Half cream
250 ml Light cream

Recipe Directions for Steve's Seafood Chowder

  1. Cook bacon until crisp. Saute onion in bacon fat.

  2. In large pot, heat chicken stock, water and cook diced potatoes for 10 minutes.

  3. Add lobster, crab, salmon, sole, scallops, clams with juice, bottle of clam juice, curry, cayenne, salt, pepper.

  4. Cook for 10 minutes then add Half and Half Cream and Light Cream.

  5. Cook for 5 - 10 minutes more over low heat.
