Low calorie delicious soup. Leave out the croutons for even less calories and carbs.

Recipe Ingredients for Steve's Gazpacho

9 tomatoes
2 green peppers
1/2 jalepeno pepper
1 small onion
3 oz scallions
2 cucumbers
3 cloves garlic
2 tbsp olive oil
2 oz parsley
1 tbsp worcestershire sauce
1 quart tomato juice
4 ounce croutons
1 quart Vegetable juice

Recipe Directions for Steve's Gazpacho

  1. Drop tomatoes in boiling water for about ten seconds. When skin splits remove and peel.

  2. Put peeled tomatoes in blender or food processor and make a juice of them.

  3. Finely chop all vegetables (seed cucumbers if desired).

  4. Mix everything together, salt and pepper to taste, and refrigerate.
