Recipe Ingredients for Steph's Low Fat Carrot Muffins

1 1/2 cup Whole Wheat Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
2 tsp Cinnamon, Ground
1/2 tsp Nutmeg, Ground
1/2 tsp Ginger, Ground
1/4 cup Egg Substitute
2 tsp Vanilla Extract
4 oz Apple Sauce Unsweetened Organics
1/2 cup Milk, Nonfat, Fluid
0.33 cup, packed Sugars, Brown
8 oz Crushed Pineapple in Its Own Juice
1 1/2 cup, grated Carrots
0.33 cup Craisins, Sweetened Dried Cranberries

Recipe Directions for Steph's Low Fat Carrot Muffins

Combine all dry ingredients, including nuts and chopped craisins in large bowl. In a seperate bowl,combine all wet ingredients, then stir in slightly drained pineapple and the carrots. Add dry mix to wet and mix until just incorporated. Bake at 350 for 20-25 min. until toothpick comes out clean. I spray pan and liners a little with butter flavored cooking spray as there is no oil to keep from sticking to muffin tins!
