2 medium banana Bananas
1.5 cup Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking Powder
2.8 g Sea Salt
12 serving Agave Nectar
5.33 serving Extra Virgin Olive Oil
1 large Egg, Whole
0.333 cup, packed Sugars, Brown
0.13 cup Gold Medal All Purpose Flour
0.13 tsp Cinnamon, Ground
1 tbsp Butter

Recipe Directions for Steph's Banana Muffin (Healthier)

  1. Banana Crumb Muffins

  2. 1 1/2 c wheat flour

  3. 1 tsp baking soda

  4. 1 tsp baking powder

  5. 1/2 tsp low-sodium salt

  6. 2 or 3 over-ripe bananas

  7. 3/4 c white sugar (or equal amt agave syrup)

  8. 1/3 c butter, melted (or equal amt healthy oil)

  9. 1 egg

  10. -------

  11. 1/3 c packed brown sugar

  12. 2 tbsp flour

  13. 1/8 tsp cinnamon (or to taste)

  14. 1 tbsp butter, cold (or healthy oil)

  15. Preheat oven to 375.

  16. Line tin with muffin cups.

  17. In large bowl, mix together flour, soda, powder and salt.

  18. In another bowl, beat together bananas, sugar, egg and melted butter.

  19. Keep bananas fairly chunky. The mix shouldn?t be smooth!

  20. Stir the wet ingredients into the dry until just moistened.

  21. Spoon batter into prepared muffin cups (almost to the top).

  22. In small bowl, combine crumb topping (br sugar, flour & cinnamon). Cut in 1 tbsp cold butter until mixture resembles coarse cornmeal.

  23. Sprinkle topping over muffins. Bake for 18-20 min or until toothpick comes out clean.
