Recipe Ingredients for Stephanie's simple Collard Greens

2 lbs collard greens, tough stems discarded, leaves chopped
2 tbsp onion, chopped
1 garlic clove, minced
3/4 oz bacon fat
2 tbsp olive oil
2 tbsp dark sesame oil (Dynasty or comparable)
1 tsp Chili pepper flakes, a pinch
1/8 tsp Salt, a couple pinches
1/4 tsp Sugar, a couple pinches

Recipe Directions for Stephanie's simple Collard Greens

  1. Heat the bacon fat, add onions and saute until translucent.

  2. Add sugar, garlic and crushed read pepper and saute about 30 seconds

  3. Add olive oil, collard greens and sesame oil. Reduce heat to Low, cover and simmer for 10 minutes.

  4. Stir, add salt and pepper to taste and serve immediately.
