Recipe Ingredients for Stephanie Alexander's Banana Cake

125 grams Butter
1 1/2 cup Sugars, Granulated
3 large Egg, Whole
2 medium (7" to 7-7/8" long) Bananas
1 tsp Vanilla Extract
250 grams Self Raising Flour
1 serving Baking Powder
1 serving Salt
1 tsp Cinnamon, Ground
1 tsp Allspice, Ground
1/2 cup Lactose Free, Lowfat 1%, Ultra-Pasteurized
2 grams Lemon Juice, Canned Or Bottled

Recipe Directions for Stephanie Alexander's Banana Cake

  1. Preheat oven to 180C or 350F.

  2. Cream butter, sugar and eggs until pale and fluffy.

  3. Beat in eggs, mashed banana and vanilla.

  4. Sift in dry ingredients and add to mixture, alternating with the lemon juice/milk mix.

  5. Grease and line a 8"(20cm) round baking tin with baking paper.

  6. Pour in mixture. Bake at 180C (350F) for 45 minutes or until tests cooked/clean.

  7. Let it cool for 10 mins in tin and then turn out onto a wire rack. Cool completely before cutting.

  8. Serve with fresh berries.
