Delicious Tortilla Soup! (chips not included)

Recipe Ingredients for Steph Hutchison's Tortilla Soup

1 lb chicken
1 tsp cumin
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp cayenne
1/4 c onion
30 oz diced tomatoes
16 oz corn, frozen
30 oz black beans
30 oz chicken broth
1/2 c rice
1/2 c cheese

Recipe Directions for Steph Hutchison's Tortilla Soup

  1. Cook chicken in cumin, salt, chili powder, cayenne and onion.

  2. Cube chicken and place in crock pot.

  3. Add tomato, corn, beans, broth and rice.

  4. Cook for three hours (or so).

  5. Just before serving cook in some cilantro (to taste).

  6. Scoop soup into bowls, topping with cheese, sour cream and tortilla chips (and salsa if you want it hotter).
