This is the soup I use for the cabbage soup diet. Its both tasty and filling.

Recipe Ingredients for Stef's Cabbage Soup

46 oz Low Sodium V8 100% Vegetable Juice
1.2 oz Soup, Lipton, Recipe Secrets Savory Herb
0.33 oz Chicken Flavor Bouillon
28 oz Tomatoes
1 cup, chopped Onions, Spring Or Scallions
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
2 cup, diced Celery
5 oz Carrots, Baby
0.5 head Cabbage
8 oz Mushrooms

Recipe Directions for Stef's Cabbage Soup

  1. 1. Slice green onions, put in a pot on medium heat and start to sauté with cooking spray. Do this until the onions are whiter/clearer in color (about 4-6 minutes).

  2. 2. Cut green pepper stem end off, then cut pepper in half to take out the seeds and membrane. Cut the green pepper into bite size pieces and add to pot.

  3. 3. Take the outer leafs layers off the cabbage, cut into bite size pieces, add to pot.

  4. 4. Clean carrots, mushrooms, and celery, cut into bite size pieces and toss them in. Add tomatoes now, too.

  5. 5. If you would like a spicy soup, add a small amount of curry or cayenne pepper now.

  6. 6. For seasonings, you can use a spice soup packet of your choice (no noodles!) or use beef or chicken bouillon cubes. These cubes are optional, and you can add spices you like instead (make sure not to add much salt, if any at all).

  7. 7. Use about 3-4 cups of water and 46 oz of Low Sodium V8 juice), cover and put heat on low. Let soup simmer for a long time ? about 2 hours or until vegetables are tender.
