Some healthy, yummy oat bran muffins. Using lots of "holiday" type spices because that is my favourite flavour palette, plus it goes so well with oats, raisins, cranberries, and carrots. Very wintery muffins!

Recipe Ingredients for Steen's Hearty Oat Bran Muffins

40 g oat bran
40 g whole wheat flour
2 tbs flax seeds
1/3 tsp baking powder
1/3 tsp baking soda
0.08 tsp salt
1 egg white
2 tbs Sonoma County Classics Pumpkin Butter
1 tbs olive oil
1 carrot
1/8 cup Raisins, Golden Seedless
1/8 cup dried cranberries
1/4 cup oatmeal
3/4 cup milk
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp allspice

Recipe Directions for Steen's Hearty Oat Bran Muffins

  1. Using the muffin method, mix all the dry ingredients together (oat bran, whole wheat flour, flax seeds, baking powder, baking soda, salt, oatmeal, cinnamon, ginger, nutmeg, cloves, allspice)

  2. Grind up or grate carrot

  3. Mix all the wet ingredients together (egg white, pumpkin butter, olive oil, ground carrot, raisins, cranberries, milk)

  4. Once both sets of ingredients are thoroughly mixed, combine together in a large mixing bowl quickly via stirring; do not use an electric mixer, you want to avoid agitating the flour while it is moist

  5. Bake at 400 degrees F (~205 degrees C) for 15 minutes, or until a toothpick inserted into a muffin comes out clean
