Recipe Ingredients for Steel Oat Pancakes

1 1/2 cups steel cut oats
2 cups buttermilk
2 eggs
1 tsp vanilla
2 tbsp brown sugar splenda
1 tbsp splenda
1/8 cup vegetable oil or canola oil
1/2 tsp salt
1/2 cup whole wheat flour
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder

Recipe Directions for Steel Oat Pancakes

  1. soak oats in buttermilk overnight

  2. beat together eggs, vanilla, splendas, oil

  3. stir in soaked oats

  4. combine flour, salt, nutmeg, baking soda and baking powder

  5. stir the dry mix into the wet.

  6. griddle on medium-low (300 degrees)because of the moisture, turn only once. Makes 14-4" pancakes, or 21-3" pancakes
