Recipe Ingredients for Steel Oat Muffins

2 cups steel cut oats
12 egg whites
2 granny smith apples, chopped
1 tablespoon cinnamon
1/2 teaspoon vanilla extract
3 tablespoons Splenda Sugar Blend for Baking
1 teaspoon lemon zest
1 teaspoon orange zest
1/2 cup raisins
1/4 cup ground flax seeds

Recipe Directions for Steel Oat Muffins

  1. Combine all ingredients, mix with electric mixer for 2 minutes.

  2. Pour into nonstick muffin pans.

  3. Bake at 375 for 15-20 minutes. For bread pan, cook at 375 for 60 minutes or until toothpick comes out clean.

  4. Store in ziplock bags or Tupperware in refrigerator.
