Lower fat oatmeal recipe converted from Alton Brown's recipe at the Food Network

Recipe Ingredients for Steel Cut Oatmeal

1 tsp butter
1 cup steel cut oats
3 cups boiling water
1/2 cup skim milk
1/2 cup low-fat buttermilk
1 tbsp low-fat buttermilk
2 tsp brown sugar
1/2 tsp cinnamon

Recipe Directions for Steel Cut Oatmeal

  1. In a large saucepot, melt the butter and add the oats. Stir for 2 min. to toast.

  2. Add the boiling water and reduce heat to a simmer.

  3. Keep at a low simmer for 25 min., without stirring.

  4. Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 min.

  5. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.
