1/4 c couscous
1/4 c whole wheat couscous
1/2 red pepper
1/2 zucchini
1 1/2 tbsp olive oil
6 oz tofu
1/2 tbsp white wine vinegar

Recipe Directions for Steamed tofu with vegetable couscous

  1. combine couscous, pepper, zucchini, oregano, .5 tbsp oil & 1/4 c. water in a shallow microwave safe dish

  2. season with salt & pepper.

  3. Cover and microwave on high until vegetables are crisp-tender, about 3 minutes.
