Made this during my radiation treatment whilst trying to eat healthier. Any fish would be suitable for this. Just adjust the cooking time. Amount of garlic, ginger, salt and pepper can be changed according to taste.

Recipe Ingredients for Steamed Tilapia with Crispy Garlic bits

500 grams or 1 large fish Tilapia, raw
6 cloves garlic, minced
1/2 tablespoon ginger, minced
1 teaspoon table salt
1 tablespoon ground black pepper
1/2 tablespoon extra virgin olive oil
4 cloves garlic, minced

Recipe Directions for Steamed Tilapia with Crispy Garlic bits

  1. Get your steamer ready.

  2. Prepare foil big enough to cover the whole fish.

  3. Mix garlic, ginger, salt and pepper in a bowl and rub this mixture all over the fish.

  4. Place the fish in the foil and cover the whole fish, sealing all openings.

  5. Carefully put the fish wrapped in foil inside your steamer. Cover and let it steam for 10 to 15 minutes.

  6. While the fish is steaming, heat a skillet and add in the oil.

  7. Saute the garlic until golden brown. Drain oil on paper towels and set aside.

  8. After 10-15 mins, remove the fish from the steamer and place on a plate. Carefully open the foil (watch out for the hot steam!) and sprinkle the fish with the garlic from before.

  9. Can be served with rice and caramelized onions.

  10. For a slight variation you can add calamansi (a native Filipino lemon) or lemon slices in the foil with the fish.

  11. For a more aromatic fish, put a tablespoon or so of dried rosemary in the water of your steamer. The taste would also seep into your fish.
