Steamed eggplant from Madam Wong's Long Life cookbook

Recipe Ingredients for Steamed Eggplant

1 eggplant, cubed
1 cup shitake mushrooms, sliced
1 tablespoon oil
1 tablespoon ginger, minced
1 tablespoon garlic, minced
3 tablespoons soy sauce
2 tablespoons red wine vinegar
2 tablespoons sesame oil
2 tablespoon sugar
1/4 teaspoon salt
1 teaspoon chili paste with garlic
5 cups brown rice, cooked

Recipe Directions for Steamed Eggplant

Steam eggplant and mushrooms for 30 minutes. Stir fry ginger and garlic for one minute. Add remaining ingredients and stir. Drain cooked vegetables and stir in sauce. Serve over rice.
