This baked parcel of goodness makes the perfect healthy supper recipe for a family. Filled with vegetables, chicken breasts and apple juice, the chicken cooks in the steam inside the parcel. Another healthy eating idea from Gillian McKeith's series You Are What You Eat

Recipe Ingredients for Steamed apple chicken and roast vegetables recipe Steamed apple chicken

2 lbs Organic Boneless Skinless Chicken Breast
2 tsp olive oil
2 garlic cloves, peeled and chopped
2 small onions, peeled and finely diced
2 carrots, trimmed, peeled and finely diced
1 small red pepper, deseeded and finely diced
1 bunch broccoli
20 ear,+small+5-1/2"+to+6-1/2"+long baby corn
250 ml apple juice

  1. Preheat oven to 200C

  2. 2. Take a large piece of aluminium foil and place the chicken breasts in the centre. Drizzle over the oil and add the ginger, garlic and vegetables. Draw up the sides of the foil and pour in the apple juice.

  3. 3. Scrunch up the foil to seal everything in and place in the oven for 10-15 minutes. Remove from the oven, check that the chicken is cooked (if it's still pink in the middle put the parcel back in the oven for a bit longer), and when cooked allow to rest for 5 minutes.

  4. 4. Open the parcel and serve each person immediately.
