A one-dish meal. I used New York strip steak and frozen Roasted Corn from Trader Joe's. I used Kraft prepared creamy horseradish sauce. The potatoes and green beans can be cooked ahead and refrigerated for up to 3 days. Serving Size: 422.3 grams/14.89 ounces = approx. 2 cups by volume.

Recipe Ingredients for Steak, Potato, Green Beans & Corn Salad w/ horseradish dressing

1 lb. baby potatoes
3 cups green beans
1/2 cup chives (fresh/chopped)
1/4 cup fat free sour cream
3 tablespoons red wine vinegar
3 tablespoons horseradish (Kraft Creamy Sauce)
1 tablespoon Worcestershire sauce
2 tablespoons olive oil (divided)
1 lb. beef (New York strip steak)
1 1/2 cup corn kernels

Recipe Directions for Steak, Potato, Green Beans & Corn Salad w/ horseradish dressing

  1. Cook the potatoes and cut into quarters and set aside

  2. Cook the green beans and set aside

  3. Stir in the chives

  4. Make the Dressing in separate bowl using the sour cream, the wine vinegar, the horseradish, the worcestershire sauce

  5. Whisk in 1 Tablespoon olive oil and season to taste with sea salt and ground pepper

  6. Put the potatoes, green beans chives in large bowl and add the dressing

  7. Use 1 Tblsp. olive oil to oil the grill

  8. Grill the steak and cook the corn

  9. Take steak off grill and let it rest for 5 minutes

  10. Slice the steak thinly and add to the vegetables together with any juice from the steak

  11. Toss together and serve
