Recipe Ingredients for Steak Pizzaiola

1.17 pounds beef, sirloin
1 teaspoon Italian herb seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tsp extra virgin olive oil
203 grams chicken broth, low sodium
137 grams red onion, cut lengthwise into quarters, and quarters thinly sliced
75 grams red bell pepper, cut into thin strips
84 grams orange bell pepper, cut into thin strips
60 grams garlic cloves, thinly sliced
242 grams diced tomatoes, canned, drained
1 teaspoon balsamic vinegar

Recipe Directions for Steak Pizzaiola

  1. Preheat grill or broiler. Coat the grill rack with cooking spray.

  2. Place the steak on a plate. Rub in 1/2 tsp of Italian seasoning and 1/4 tsp each of salt and black pepper into both sides of steak. Set aside.

  3. Heat the oil in a large, nonstick skillet over medium heat. Add the onion, bell peppers, garlic and remaining 1/4 tsp salt. Cook, stirring for 12 minutes, or until vegetables are tender and lightly browned.

  4. Add the tomatoes, the remaining 1/2 tsp of Italian seasoning and the remaining 1/4 tsp of black pepper. Cook, stirring 1 minute. Reduce the heat to low, cover and simmer for 5 minutes, or until the vegetables are tender. Remove from the heat and stir in vinegar.

  5. Meanwhile, grill or broil the steak 3" to 4" from the heat for 12 minutes. Remove the steak from the heat.

  6. Place the steak on a cutting board and let stand 5 minutes. Thinly slice steak and arrange on a platter with the vegetables.
