Tangy salad - can be served wrapped in tortillas or as is.

Recipe Ingredients for Steak Fajita Salad

2 tbs vinegar red wine
1 tsp ground cumin
1 tsp Dijon mustard
1 tsp honey
1 tbs olive oil
1/2 c water
1 lb steak
1 red bell pepper, cored, seeded, cut into 1/2 inch strips
1 c grape tomatoes
4 scallions, thinly sliced
1 tsp jalepeno pepper, finely minced
1 tbs lime zest
6 tbs parsley, fresh, chopped
8 oz Fresh Express Spring Mix

Recipe Directions for Steak Fajita Salad

  1. Mix together vinegar, cumin, mustard, honey, oil & water. Add salt & pepper to taste; set aside.

  2. Cook steaks; let rest. Cut into strips then cubes, place in bowl.

  3. Add bell pepper, tomatoes, scallions, jalapeno lime zest and 4 tbs parsley. Toss well with steak, then add 1/4 c vinaigrette.

  4. Line plates with lettuce, then top with salad. Sprinkle with remaining parsley; serve.
