Recipe Ingredients for Steak Diane w/ sauteed rosemary potatoes and peas

2 1/5 lbs sirloin steak
8 oz mushrooms
2 1/2 tbsp unsalted butter
2 garlic cloves
2 tbsp Worcestershire sauce
1 tbsp dijon mustard
4 oz brandy
1 cup heavy cream
1/4 cup parsley
1 lb yukon gold potatoes
2 tbsp rosemary
2 cups of peas
4 tbsp olive oil
2 tbsp salt
2 tbsp pepper

Recipe Directions for Steak Diane w/ sauteed rosemary potatoes and peas

  1. Cut potatoes into medium chunks.

  2. Parboil potatoes

  3. Portion steak into 4 equal portions

  4. Roll out steaks on cutting board using rolling pin, seasoning with salt and pepper

  5. Sear in 1tbsp olive oil for 90 seconds on each side.

  6. Remove steak from pan

  7. Saute 1 clove garlic and mushrooms in 1tbsp butter for 1 minute

  8. Add potatoes to another pan with 1tbsp of olive oil

  9. Add rosemary and 1 clove garlic to potatoes and sautee over low heat

  10. Add Brandy, mustard, and worcestershire sauce to garlic and mushrooms and flambe

  11. After flames subside, add cream and return steaks to pan. Simmer for 10 minutes

  12. Add peas and remaining butter to another pan and heat through.
