From the "Fast and Fancy Cookbook" This is a special dinner we like to enjoy on our anniversary. This is one of those "every once in a while" kinds of meals. Serve over fettuccine with a green salad and wine for a special occasion. Modified recipe from 1/4 c margarine to 1 tbsp.

Recipe Ingredients for Steak Diane

3 lb lean steak (cut into 6 steaks, 1/4" thick)
1 tbsp margarine
1/2 c chopped onion
1/2 c chopped parsley
1 1/2 tbs chili sauce
1 tsp mustard
3 tbsp lemon juice
1 tbsp worcestershire sauce
2 oz cognac (or brandy)

Recipe Directions for Steak Diane

Moisen the surface of the meat with water, sprinkle meat tenderizer evenly, like salt, over the entire surface. Pierce at 1/2" intervals. Refrigerate meat until ready to cook. In a non-stick skillet, saute steaks individually until just brown; transfer to hot platter. Add butter/margarine to pan; add onions and cook 1 minute only, to tenderize them. Combine seasonings and add; blend and heat through. Return steaks to skillet, coating each steak with sauce; then transfer back to platter. Pour remaining sauce over steak. Pour cognac/brandy into skillet to absorb remaining sauce, then pour over steaks and set aflame. Serve at once. Makes six servings.
