Steak and Cucumbers Recipe

This has to be one of the most delicious recipes that has come out of my family's Chinese/Guatemalan roots! You can also make this vegetarian by substituting the meat for another vegetable, or having just the cucumbers alone. It tastes awesome served with some rice or quinoa.

Recipe Ingredients for Steak and Cucumbers

1 1/2 lbs top sirloin steak
2 cucumbers
1/4 cup low sodium soy sauce
1/4 cup teriyaki sauce
1/4 cup onions

Recipe Directions for Steak and Cucumbers

  1. Peel and chop cucumbers into square chunks (1 cm)

  2. Cut steak into strips and add to a screaming hot skillet to brown quickly. Immediately throw in soy sauce, teriyaki sauce, onions and cucumbers.

  3. Bring down to a simmer and cover. If the pan gets too dry, add a little bit of water. There should be enough liquid for the mixture to be a little saucy.

  4. Simmer for about 20 minutes, or until cucumbers are very soft and onions are translucent.
