Nice stew The leftover stock makes a great base for soup or a quick meal when you add a packet of bean thread noodles.

Recipe Ingredients for Steak and Collards

175 g collards
2 onions
3 tbsp chopped garlic
2 tsp olive oil
1 3/4 lbs. cube steak, cut in small cubes
3 potatoes, peeled and cut into chunks
2 quarts water

Recipe Directions for Steak and Collards

  1. In a Dutch oven or deep pot, saute onions and garlic in olive oil.

  2. Add steak to brown. Add 1-2 quarts water and collard greens. Prepare greens by cutting out mid ribs, rolling a few leaves together and slicing into 1" strips. Cover, bring to the boil, and reduce heat. Let cook 30 minutes to one hour, until meat and greens are tender.
