Brown ale makes a robust gravy for beef stew

Recipe Ingredients for steak and Ale stew

2 kg diced beef
6 tablespoons flour
2 tbsp Olive oil
6 red onions, peeled, halved and roughly sliced
1/2 kg of celery, chopped
200 g rosemary, leaves picked from stem
5 pint ale or other dark ale
1 pint of water
1 kg parsnips, peeled and roughly chopped
4 carrots, peeled and roughly chopped
8 potatoes, peeled and roughly chopped
2 g Sea salt
2 g freshly ground pepper

Recipe Directions for steak and Ale stew

  1. Season the beef, sprinkle with the flour and toss around until well coated.

  2. Heat up a frying pan until it is good and hot, add a little olive oil and fry the beef in 2 batches until nice and brown.

  3. Transfer the meat to a large pan

  4. Put the casserole on a medium heat, add the red onions, and cook until the onions are translucent.

  5. Add your celery and rosemary.

  6. Now you can pour in your ale and water, adding your parsnips, carrots, and potatoes. Bring to the boil, put a lid on, turn down the heat and leave it to simmer for 2 hours.

  7. Adding more liquid if needed.

  8. Taste it, season it as you like, and then serve the stew with some greens and loads of bread to mop up the juices.
