I had some leftover grilled eggplant and a whole lotta black beans I had made from scratch so I turned it all into this delish chili! I couldn't remember what spices I put in so I left that blank but you can add whatever you think sounds good!

Recipe Ingredients for Starr's veggie chili recipie

1 1/2 cups kidney beans
1 cup black beans
1 cup eggplant
1 cup diced tomatoes
14 1/2 ounces diced tomatoes
1 can tomato puree
1/2 cup Vegetable Broth
1 red bell pepper
2 tsp extra virgin olive oil
1 onion
2 cloves garlic

Recipe Directions for Starr's veggie chili recipie

  1. - make black beans by soaking overnight in water and then boiling for 3 hours on stovetop until most of the liquid is reduced

  2. - chop grilled eggplant and all other veggies

  3. -add all ingredients to crockpot

  4. -simmer on low for 6 hours

  5. - season to taste
