Standby Soup Recipe

A tasty, warming soup, made from the stuff I found in my cupboards :) If you leave out the Worcestershire sauce, then it's totally vegetarian.

Recipe Ingredients for Standby Soup

270 g Sweet Potato, finely diced
200 g Red Lentils
152 g Carrots, finely diced
142 g Onion, finely diced
104 g Greens, spring, shredded (or any green cabbage)
400 g Tomatoes, canned, chopped
20 g Garlic, finely chopped
20 g Stock Cube, Vegetable
1 tbsp Worcestershire Sauce
1 tbsp Extra Virgin Olive Oil
2 tsp Coriander, dried leaf (or sm. bunch fresh)
1 pinch Salt
1 pinch Pepper, Black
2 pints Water, Boiling (40 fl.oz)

Recipe Directions for Standby Soup

  1. Prepare all the veg as stated in the ingredient list.

  2. Put the stock cubes into 2 pints of boiling water and dissolve.

  3. Put the olive oil into a large saucepan, then gently sauté the onion until translucent - about 10 minutes.

  4. Then put in the sweet potato and carrot, and slowly cook for another 10 minutes.

  5. Put in the lentils, and canned tomatoes, and stir, then stir in the vegetable stock.

  6. Add the Worcestershire Sauce, and the Coriander (either dried leaf, or fresh when available), and stir.

  7. Put on a lid, and bring to the boil, then simmer for 30 minutes.

  8. Once cooked, liquidize half of the soup, then stir it back in, to thicken the soup.

  9. Then add the shredded cabbage, and cook for a further 10 minutes,

  10. Serve with crusty bread and cheese, if preferred.
