Not at all healthy, but a great looking and tasting holiday cookie.

Recipe Ingredients for Stained Glass Icebox Cookies

1 cup unsalted butter
1 cup powdered sugar
1/2 tsp lemon extract
1/2 tsp vanilla extract
2 cups all-purpose flour
40 grams candied cherries
2 tbsp sugar

Recipe Directions for Stained Glass Icebox Cookies

  1. Butter should be at room temp.

  2. Mix butter and powdered sugar on low until blended. Beat at medium 2 minutes until fluffy.

  3. Add lemon and vanilla.

  4. Stir in flour in small batches just until dough forms.

  5. Divide dough in half and place each half on a piece of wax paper.

  6. With floured hands, gently spread dough to form a 9x6x1/2 inch rectangle.

  7. Place red and green cherries down center. Pull long sides of dough up and over cherries. Pinch together to form log.

  8. Press dough against cherries to center them. Seal ends and roll into a smooth log.

  9. Roll in coating of colored sugar or nuts.

  10. Refridgerate until firm (4 hours or overnight.)

  11. Slice dough with thin-bladed knife in 1/4 inch slices. Place on baking sheet lined with parchment about 1 inch apart.

  12. Bake at 350 for 10 minutes or until lightly golden around the edges.

  13. Cool on baking sheets 1 to 2 minutes, then move to cooling rake.
