Recipe Ingredients for Stacy's Homemade Vegetable Lasagna

1 lb uncooked lasagna noodles
32 oz cottage cheese
1/4 c extra-virgin olive oil
1 onion
4 cloves garlic, minced
8 cups spinach
1 red bell pepper
1 green bell pepper
8 oz mushrooms
1/2 cup cilantro, chopped
1 tsp salt
1/2 tsp pepper
8 oz Ragu

Recipe Directions for Stacy's Homemade Vegetable Lasagna

  1. Preheat oven to 375 degrees F. Grease a 9 x 13'' casserole dish or two 8'' square pans.

  2. Cook lasagna noodles in boiling salted water according to package directions.

  3. In a large skillet, heat 2 TBSP olive oil over medium heat until hot. Add onion and cook, stirring, until softened. Add garlic and cook 1 minute. Add remaining 2 TBSP of olive oi, spinach, bell peppers, mushrooms, cilantro, basil, salt, and black pepper and cook just until spinach wilts, 3-5 minutes. Remove from heat.

  4. Arrange half of lasagna noodles in prepared casserole dish. Cover noodles with half of spinach mixture. Layer with half of cottage cheese mixture. Repeat layers with remaining lasagna, spinach, and cottage cheese. Bake until the edges are starting to get a little brown, 25-30 minutes. Let cool 10 minutes before cutting.
