Bake it in a springform pan for best results. Can be made in a 9-inch cake pan, and served directly from the pan lasagna-style.

Recipe Ingredients for Stacked Burrito Pie

2 tbsp vegetable oil
1 medium onion
2 cloves garlic
3/4 lb lean ground beef
2 tsp chili powder
1 tsp cumin
1/2 tsp salt
3/4 cup water
15 1/2 oz black beans
1 1/2 cups frozen corn kernels
4 Flour tortillas
1 cup salsa
8 oz shredded cheddar cheese

Recipe Directions for Stacked Burrito Pie

  1. Warm the oil. Add the onion and saute' 5 minutes; add the garlic and saute' another minute.

  2. Increase heat to medium, add the ground beef, chili powder, and cumin. Cook until beef is browned and no longer pink, stirring often, about 3 minutes.

  3. Add the salt, water, black beans and corn, and bring the mixture to a boil. Allow to boil, stirring occasionally, until the liquid evaporates, about 20 minutes. Remove mixture from heat and cool about 10 minutes.

  4. Heat oven to 350. Trim 3 of the 4 flour tortillas to the size of the springform pan.

  5. Butter the bottom and sides of the pan. Press untrimmed tortilla evenly into the pan's bottom. Spread 2 tbs. sour cream over the tortilla, followed by 1/4 cup salsa. Spoon and spreat 1/4 of the meat mixture over the salsa, then sprinkle 1/4 of the cheese evenly over the top.

  6. Place one of the trimmed tortillas on top of the cheese, then repeat the layering of the sour cream, salsa, meat mixture and cheese. Repeat 2 more times, ending with the last of the cheese on top.

  7. Bake until heated through, about 30 minutes. Allow to cool 10 minutes, then remove the rim form the springform pan. Slice the pie into wedges. Serves 10.
