Recipe Ingredients for Staci's Lentil soup

2 tbsp olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
2 teaspoons salt
1 pound dry lentils
1 cup chopped tomatos
3 1/2 cups chicken broth
4 1/2 cups water
