Stace's Buckwheat Recipe

Vegetarian, gluten-free & high fiber. Be creative with your veggies! My veggies are only suggestions. Arrowhead Mills makes buckwheat groats, and these can be found in the 'organic' section of large grocery stores. Buckwheat is actually a fruit, and a relative of rhubarb. It's NOT a wheat!

Recipe Ingredients for Stace's Buckwheat

1 c Buckwheat groats
1 egg
1 T olive oil
1/2 c onion
1/2 c green pepper
1/2 c celery
1/2 c squash
1/2 c carrot
1/2 c tomato
1/2 c cilantro
3 c water
1/2 t salt
1/2 t black pepper or red pepper (depending on your taste)
1/2 c cheddar cheese (optional)

Recipe Directions for Stace's Buckwheat

  1. Toast buckwheat groats in olive oil over low heat for about 5 minutes (this brings out the flavor)

  2. Turn heat off, add the egg to the groats (the egg coats the groats so they don't stick together like a gross mass)

  3. In another large tureen, brown the veggies.

  4. Add toasted groats and 3 cups water

  5. Steam together for ~15 minutes until liquid is absorbed and the groats are tender. Add salt and pepper to taste.

  6. Add cheese at this time if desired. You can add double this amount if you're a cheese lover! (or save cheese for the end to garnish your piece)

  7. Transfer mixture to 2 loaf pans (spray them if needed to avoid sticking)

  8. Bake 350 degrees for 1 hour

  9. This freezes well for future meals. I cut into pieces and wrap each in foil. I like to eat mine with a T of Annie's Organic Ketchup on the top. I also broil each piece to make the top crispy. YUM!
