A healthy and tasty tomatoes plus chicken dish with a twist to serve over rice.

Recipe Ingredients for S's Country Captain

3 cup, chopped or diced Chicken, Breast, Meat Only
2 large Onions
1 serving Bell Pepper
1 clove Garlic
4 cup Tomatoes, Red, Ripe
3 tbsp Olive Oil
2 tsp Curry Powder
1 Teaspoon Thyme
0.25 tsp Pepper, Red Or Cayenne
1 tsp Salt, Table

Recipe Directions for S's Country Captain

  1. Saute chicken, onions and bell pepper in oil.

  2. Add tomatoes and cook five minutes.

  3. Add remaining ingredients and cook a little longer.

  4. Serve over rice.

  5. Note: The original recipe calls for meat of one whole boiled chicken. It also calls for 1/2c soaked golden raisins and 1/2c blanched almonds, which add a unique and delicious touch.
