Light holiday dessert/ side dish. Wonderful change from the heavy stuff.

Recipe Ingredients for S's Ambrosia

10 cup sections, without membranes Oranges
4 cup Crushed Pineapple in Its Own Juice
1 cup Coconut Meat, Dried (Desiccated), Sweetened, Flaked, Packaged

Recipe Directions for S's Ambrosia

Section 12 oranges (this is the tedious part). To the sections, add 2 cans crushed pineapple and 1 cup coconut. Drain and rinse cherries and add. If oranges are very tart add a teaspoon or two of sugar, if mixture is dry, add a little orange juice. Serving size is ~1 cup.
