Delicious butternut squash& pumpkin soup. I love to cook and this keeps me busy in the kitchen without baking (and that's where all the calories are!)

Recipe Ingredients for Squmpkin Soup

4 cups butternut squash
2 stalks celery
2 large carrots
2 tablespoons butter
2 tablespoons olive oil
6 cups chicken broth
3 cups cooked pumpkin
1 large onion
2 cups sweet potatoes

Recipe Directions for Squmpkin Soup

Sautee celery, carrots, and onions in butter and olive oil. Add the chicken broth and butter nut squash. Cook 30-40 minutes. Cook pumpkin seperately, add to squash, 3tsps curry powder, 1 tsp nutmeg. Let mixture cool. Pureee in blender, store in frig or freeze.
