Squishy Sorta Muffuletta Recipe

The sandwich keeps well, chilled, and it is good for taking along on picnics and camping trips. Assemble the sandwich between 2 to 8 hours before eating. Other good additions to the sandwich are strips of roasted red and yellow pepper, whole fresh basil leaves, pesto,pepperoncini, sliced sweet red cherry peppers, pancetta, hard sausages. Any leftover mayo mixture makes a great salad dressing (may need to add sour cream to thicken it.)

Recipe Ingredients for Squishy Sorta Muffuletta

1 lb French bread
6 oz artichoke hearts, liquid reserved
1/2 c mayonnaise
3 tomatoes, ripe
3 oz salami, thinly sliced
1/2 lb turkey breast, thinly sliced
1/4 lb cheese, thinly sliced
2 oz black olives, sliced
1 red onion

Recipe Directions for Squishy Sorta Muffuletta

  1. Cut loaf of bread in half horizontally, and hollow out the soft bread from both halves, leaving a shell about 3/4-inch think.

  2. Reserve soft bread for another use.

  3. In a small bowl, combine desired amount of artichoke liquid with mayonnaise and spread onto bread shells.

  4. In bottom half, layer ingredients at least 3 times until mounded high, beginning and ending with tomatoes.

  5. Place top half of bread over mound of ingredients.

  6. Wrap entire loaf tightly with plastic wrap.

  7. Refrigerate.

  8. Before serving, place sandwich (wrapped in plastic) on a hard surface and SIT ON IT! This smashes the ingredients together and makes it easier to serve. Do not omit this step, strange as it seems, as this step is what makes the sandwich delicious.

  9. Slice the loaf into wedges or slices to serve.
