Recipe Ingredients for Squid Adobo

2 tablespoons light olive oil
1 tablespoon garlic, minced
1 medium onion, chopped
2 medium tomatoes, chopped
1 pound squid
1/4 cup vinegar
1 jalapeņo pepper
1/2 teaspoon kosher salt
1 pepper to taste

Recipe Directions for Squid Adobo

  1. In a wok or skillet heat oil, saute garlic until fragrant, onions until translucent, tomatoes until soft.

  2. Add squid, vinegar, pepper, and cook uncovered until tender. About 5 minutes.

  3. Serve with steamed rice.
