Recipe Ingredients for SquibGirl's Smoked Salmon Frittata

1 medium onion
3 cloves garlic
8 oz. Salmon
6 eggs
1 cup cheddar cheese
2 cups baby spinach
2 tbsp Extra Virgin Olive Oil

Recipe Directions for SquibGirl's Smoked Salmon Frittata

  1. Pre-heat oven to 375

  2. Heat a Large Cast iron skillet on medium

  3. Chop onion and garlic, add oil to skillet and swirl to coat, then add onion and garlic and sauté until onion is almost translucent

  4. Lightly whip eggs until combined, then stir in cheese.and chppped baby spinach

  5. When onion is cooked, spread mixture evenly across the skillet then crumble the salmon on top. Pour egg mixture over all of it and continue to heat until bubbles come up through the mixture.

  6. Move skillet to the oven and bake until set (about 15 minutes)
