Boneless chicken breasts sauteed in butter and finished with a beer glaze.

Recipe Ingredients for SquibGirls Beer Fried Chicken

2 lbs Boneless Chicken Breasts
4 tbsp Butter
1 tbsp Olive Oil
1/3 cup flour
1 salt and Pepper to taste
1/2 cup beer

Recipe Directions for SquibGirls Beer Fried Chicken

  1. Melt 2 TBSP butter in a heavy skillet (I use cast iron) on medium high heat.

  2. In a dish, add salt and pepper to flour and mix with a fork.

  3. When the butter has melted add 1/2 TBSP olive oil to the skillet (this brings up the smoke point).

  4. Dredge each chicken breast in the flour mixture, making sure the breast is completely coated.

  5. Place chicken, cut side down, in the skillet, leaving some space around each breast.

  6. Leave chicken alone to simmer or saute in the skillet, resisting any urge to move it until the bottom is well browned - usually about 4-6 minutes. If the pan appears dry add additional 2 TBSP of butter and 1/2 TBSP of olive oil just before turning the breasts. Allow second side to brown nicely. Add beer all at once, lifting the breasts and turning them.

  7. Reduce heat to medium and allow beer to simmer. When breasts are cooked through - usually 7-10 minutes - turn one last time before removing breasts to a serving platter and placing them in a warm oven.

  8. Add additional beer if needed and scrape off any pan drippings, continue to reduce until thick.

  9. Serve chicken with brown rice, pour beer/pan drippings over the breasts just before serving.
