Stolen from sparks - Mac & Cheese, but with Spaghetti Squash and goo.

Recipe Ingredients for Squashy Mac & Cheese Casserole

3 lbs Spaghetti Squash
2 tbsp Parmesan Cheese
4 oz Turkey Ham
1/2 cup Mozzarella
1/2 cup Onions
1 tsp Garlic
1 cup Tomatoes
1 cup Spinach
1 tbsp Parsley
1 tbsp Olive Oil

Recipe Directions for Squashy Mac & Cheese Casserole

  1. Warm the olive oil in a pan - saute veggies with seasonings / herbs.

  2. Pierce squash several time to vent. Microwave on High 10 min. or until soft, turning over after 5 min.

  3. Remove from Microwave & let stand 5 min. or so before opening. Beware, it will be extremely HOT!

  4. Cut squash in half long wise, remove & discard seeds. Using a fork, scrape insides to remove strands of 'spaghetti'.

  5. Combine ingredients into a casserole dish - save some cheese for sprinkling on top.

  6. Place in the oven at 375 and bake till cheese is melted throughout.
