Recipe Ingredients for Squash and wild rice soup

1 tablespoon butter
1/4 cup chopped onion
1 cup uncooked wild rice
3 cups cooked squash
9 cups vegetable broth

Recipe Directions for Squash and wild rice soup

Melt butter in stockpot and add shallot; saute for a minute over medium heat; add wild rice grains and saute for a few minutes more. Add vegetable broth (or lowfat broth of your choice) and simmer rice until grains burst; usually around 45 minutes. Stir in cooked squash and heat through, salt and pepper to taste.
